walter t.x. slawski
proprietor & executive chef
settling in charlottesville from san diego, california and harare, zimbabwe, walter launched his catering company as an undergraduate at the university of virginia. an owner-operator, walter is actively engaged with all aspects of planning and executing events. he works closely with the catering team to ensure each member’s individual success. in a love affair with food, drink, and entertaining, walter dedicates his professional career to crafting your beautiful moments. walter has a b.a. in economics from the university of virginia. when away from work, walter enjoys fishing and cooking with his daughters, sophie and calla.
director of sales & marketing
as a native of charlottesville, virginia, courtney has strong ties to the community and great relationships within the wedding and event industry. after attending the university of virginia, courtney immersed herself in the hospitality industry, locally and internationally, for over a decade. prior to joining the catering outfit, she has worked as an event coordinator and catering director building a great professional reputation with local venues, businesses and vendors within the charlottesville area and beyond. in addition to serving as the wedding planner for many of her brides, courtney is knowledgeable in all aspects of wedding and event management. with an inherent love for all things weddings, coupled with a calm demeanor and drive for perfection, courtney is a great fit for the catering outfit team. in her spare time, she loves working on her belmont cottage and visiting local vineyards.
chef de cuisine & director of culinary operations
after growing up in coastal new hampshire, mike moved south to study mechanical engineering at virginia tech. there, he found a love for cooking after working in various restaurants throughout college and decided to change course and follow his passion. since then, mike has grown from lead line cook, to banquet chef, to sous chef, to chef de cuisine. mike brings a friendly smile and a creative attitude towards his role as chef de cuisine at the catering outfit, working closely with walter on menu development and on-site at events as lead event chef. when he’s not working, mike enjoys water sports, tending to his garden, hitting the slopes, and spending time with his wife.
director of operations
born in raised in piney river, virginia, dale relocated to charlottesville over 15 years ago, attracted to its vibrant food and music scene. dale has been in the kitchen since a very young age and discovered early on his passion for the industry and people. starting as dishwasher in the food industry and working his way up to general manager positions in the charlottesville restaurant scene, dale found himself very blessed to have some incredible mentors along the way that have helped him grow, thrive and set him up for his current role as the director of operations at the catering outfit. he is a firm believer that if you take care of your people the rest will take care of itself and is grateful to be a part of a team that shares his passions. when not at work, you will find dale on his piano or cooking meals in his home kitchen.
